Vegan Banana Bread

Today's recipe is brought to you from the Post Punk Kitchen with some fiddling by me in mine... quite the comfort food to help you get over the panic attack the Democrats had when they almost had to debate the Cheney Articles of Impeachment earlier this week.

8x4 Bread pan (coat or spray with oil)

1/2 cup brown sugar
1/2 cup white sugar
1/2 cup margarine
2-3 ripe bananas, depending on size, mashed (I like to do'em in the food processor)
1 1/2 cup unbleached white flour
1/2 cup whole wheat pastry flour
1/4 cup soy milk, plain
1 1/2 tsp vanilla
1 tsp. cinnamon
1/4 tsp. allspice
1/2 tsp. salt

Sift together all dry ingredients
Cream sugars and margarine. Add bananas, soymilk, vanilla.

Add the wet ingredients to the dry. Mix well.

Pour into pan and bake for 60 to 70 minutes at 350 degrees.

This stuff is awesome. Only takes 15 minutes to get in the oven if you've got the stuff on hand.
