Today I Am Grateful For Pancakes

Pancakes must be one of my favorite foods in this world. I have a great receipe that I adapted from the cookbook "Vegan with a Vengence". We had these for breakfast today with real maple syrup. If you're going to use that Log Cabin or Pillsbury crap, there's no reason to make pancakes from scratch. Tasty with blueberrys or bananas too!

Ingredients:

Dry

1 cup unbleached white flour
1/4 cup whole wheat pastry flour
2 tsps. baking powder
1/2 tsp. salt

Wet

1 1/4 cup soy milk
2 tbsps. canola oil
2 tsps. vanilla extract
2 tbsps. sugar

Sift together the dry ingredients. Mix the wet ingredients well.

Add the wet to dry and mix until just combined - don't over mix it!

Do your thing on a hot griddle. Makes about six nice sized pancakes. Enjoy!
